Advice on Wheelset/Discs Upgrade

I've got a 2004 Specialized Epic with Avid Rim brakes. I don't really do enough riding to justify £2k on a new Epic but think it might be worth upgrading to discs. The frame has IS mounts front and rear. I'm 6ft and weigh 90kg and ride mostly cross country.
Any suggestions on the best wheelsets and disc brakes? I guess I'm looking to spend £250 to £350 on the hardware. I've looked at Merlin a few times as they offer quite a few wheel and brake packages.

I reckon these would be all you need.Shimano brakes are always easy to live with and service and these are a good set of handbuilt wheels.
