One is lovely looking and performs flawlessly, the other is Shimano.

Being less flippant, they are both very good groupsets so your decision should be based more on what feels and looks better to you.

The levers work very differently, some people disliking the button shifter on Campagnolo levers, others, like myself, disliking levers that brake and change gear. The levers feel different to grip as well, and as you'll spend hours on the hoods it would be best to have a feel of both. I prefer the feel of Campag hoods, but you'll get just as many prefer Shimano.

On looks - do you like the idea of carbon or a polished metal finish?

I have the 105 and enjoy using it, gear changes are smooth doesn't weigh too much either personal preference really on paper they are no doubt very close. i have never used centaur however so i can't say how much different they are in feel.

It's a personal thing, both are perfectly decent and do their job well, so go for the one which feels more comfortable, both in hood shape and shifter position.

I've had both and personally prefer Centaur. The brakes seem better, I like the good shape and the more mechanical feel of changes. Apparently it's lighter too. 105 is however smoother, cheaper and easier to get parts for, and most LBS are more used to dealing with Shimano.
