I'll kick things off with Chris Boardmans TDF time trial from 1994.
This was around the time I first started watching the TDF and I remember all the newspaper hype around the Lotus bike. Clocking speeds of 55kph.

When Renshaw talks about the magic number of 180 metres, it’s really just another way of saying that Cavendish can hold top speed for about 10 seconds. Seriously amazing finish and showing he isn't a one trick pony as so many say because he shows there he can do it without a drilled and dedicated lead out, utter genious.
Taking a different tack, one of my favourite moments of Le tour, because it's just jaw dropping carnage, Yet oddly amusing when the guy responsible hops up and acts like nothing happened, yep, you guessed it, the infamous Policeman crash...
