Edinburgh to London

Myself and a group of work colleagues from the airline BA CityFlyer are planning a ride from Edinburgh Airport to London City Airport, (one of the airline's routes), in support of Comic Relief. As we are all relatively inexperienced cyclists we would like some advice regarding the necessary kit we should carry. The ride will be completed over six days and we would like to know what types of clothing and also what types of foods we should have with us. Any advice will be greatly appreciated.
