Rebuilding a 1996 Panasonix CB4000 mixte

i had my two-year-old Koga Randonneur nicked last November. Rather than spend the £1800 ex vat to replace it, I've decided to rebuild my 1996 Panasonic CB4000 mixte to a high spec. However I've not got a clue what I should be spending my £1000-1500 budget on. I'm keeping the frame & forks, am set on an adjustable stem & BBB butterfly bars and am open to suggestions on the rest. Frame & forks are Tange1 chromo. I commute 20km a day road/bike paths and do 100-150km at weekends road/bike/towpaths. Any discussion, suggestions, reflections more that welcome.
