Wheel sets

Any suggestions for a new wheelset for my Trek1.9 ? I'm 14 stone and have a budget of £500 max. I like bling but want strength and reliabilty!!! At the mo I have the original Bonty Race set.
My LBS have informed me that the rim is nearly worn through and I'm not to ride it. There's too much on the interweb to make a fast, well informed choice. I like the look of Mavic Ksyrium elite or better.
Help, as I've lost touch with the market !!

Shimano RS80, Fulcrum 3 or go to Wheelsmith. Don't pay more than £350 for either of the first two.
For example -

Yeah, factory wheels are great, but how suitable they are for recreational cyclists, I don't know. Give me wheels with replaceable rims anyday. Rims wear out long before hubs do. But I guess certain types like bling appeal over practicability.0

Well, it seems at my level that there isnt much difference between Fulcrum 3 and Mavic Elite.
Thanks for everyone's help- this being my first venture onto any forum, EVER !!!
Cheapest place for Mavic Ksyrium Elite's ? I need to get back on the road........
PS - how is Ksyrium pronounced ?? !!
