Bar Tape

I have a new bike on order and was planning to pass my current bike on to my son. All I had to do was replace the rear derailleur, put on new tyres and brake blocks and service and clean it.
No problem until I came off yesterday and scraped the LHS handlebars taking a chunk out of the bar tape.
There is quite a lot of debate on here about hoe to replace the tape so can I get the right advice on what to buy and how to fit it? I have never replaced the tape.
Youtube links welcome.

to get the overlap in the conventional direction, start taping from the bottom and work to the centre. overlap by about 40% of the width of the tape, but they usually make it pleanty long enough so you dont run out, just trim the excess off when youre done. leave it overhanging the end of the bar when you start, so it can be tucked into the tube and the bung pressed in to hold it neatly be. the tricky bit is round the shifters, youl need a little strip in the right place to cover a gap when you rap over. other than that just trial and error. keep it slightly stretched as you wrap.0
