Groupset/gearing question

I'm only used to 50/34 chainset with 12/25 cassette on a roadbike, but have a choice coming up between the same or 53/39 with 11/26
Question is, would this be too 'extreme' for a non racer, doing longer distances over fairly undemanding terrain? I almost never use the 34 chainring on my usual rides, and only very occasionally spin out down hills, but I would like the bike to be flexible enough to take on hillier rides outside my usual area now and again
In my very limited experience and understanding of the science, the 53/39/11/26 would seem ideal, but any wise words please gearing gurus? Thanks

Its not "too extreme", and if you rarely use the 34 then perhaps worth the change and you can always replace the 26 with a 27 if you're off to the alps (which gives almost the same as a 34-25)
That said, if what you've got works for you then I'm not sure what you'll gain by changing
