New wheels - Mavic vs Easton vs Pro-Lite

Hi all,
Looking to upgrade my factory issue wheels on a Bianchi via Nirone. I've been into the LBS & had a chat & they strongly advise going for Mavic.
They also came out with an interesting fact that 1g saved on a wheel is equivalent to 3g saved elsewhere in terms of performance.
I'm looking to spend £200-£300 on a wheelset. My basic questions that I'd be grateful for advice are...
1) how much of a difference on the bike will I see from an upgrade to a decent wheelset?
2) Is the 1g-3g thing true?
3) Do I need to go above £200 to see a real difference?
I'm looking at Mavic Cosmic Elite, Pro-Lite Bracchiano (if I can get them) or maybe Easton EA50s. The Mavic are the most expensive but look like the better wheels to me.
