I use 2.1 maxxis swampthings. I paid £25 for the pair a couple of years ago and they're still going strong, although I only put them on for winter. They let you pedal through nearly any mud and straight up grass banks, have stacks of frame clearance and are ok on tarmac and harder ground.
Only problem is I don't think you can get 2.1's any more, although they still sell 2.3's.2008 Giant Trance (own build)

Panaracer Trailraker 2.1
Very good in the mud. Little slow on the road, I wouldn't want to do more than a couple of miles on road but off road they are really worth having, merlin were doing a good deal on them.0 -
Mud X 2.0 and for really deep stuff 1.8
Dave.0 -
Mud X does exactly what it's supposed to but they're pretty low volume, I kept trying to ride like I was on normal tyres and whacking the rims off things. Also they're a wee bit disconcerting in that they stick like glue in mud but then act up on wet rock and roots, you get used to the grip then it just goes away. Ironically I reckon they'd be better if they gripped less well in the slop, it'd be less disconcerting when they choose to let go then.
So, Swampthing 2.35s for me, stick-e on the front, maxxpro on the back. Still narrow enough to cut mud since the claimed size is a total lie, but they stick on anything, much better when out of the mud than my Mud X. On the other hand they drag like anchorsand they're heavy. But worth it I think.

Bontrager XR4. Excellent in mud but still work well when you want to go banzai on fast trails.Transition Patrol - viewtopic.php?f=10017&t=130702350
