Gear Set-Up, time for a Pro?

I am having serious issues with my gears at the moment, they have never been right since I built my bike up a couple of months ago, most parts are new with regards to the gears although I do have a mixture of parts which are;
Shimano XT Chainset
Shimano XTR Rear Mech (Second hand)
SRAM PG990 Rear Cassette
Shimano XT Chain
New Gear Cable
Shimano LX shifter
Its set up as a single ring up front and a 9speed rear, I can get it to seemingly work and run smoothly on a stand but as soon as I start riding it the gears jump all over the place and any adjustment in the cable does not seem to do anything.
The only thing I wonder could be causing the problem is the rear mech arm looks slightly bent/angled when hanging down....
The bike is a Cove Hustler but being a FS shouldn't make any difference should it?
Any Ideas? Maybe its just time to get a pro to have a look.....

Do you mean the mech hanger looks bent, or the dérailleur cage? Either would cause problems. A pic would help.I don't do smileys.
