Give you an idea of what you want here mate

You could maybe get some cash back by selling your triple on ebay?

I don't get the question really in that the answer is very obvious*. The cheapest and easiest way is to just get a hex key and take the inner ring off.

If you want, you can adjust the front mech limit screws or alternatively just remember not to shift down. Or if you really want to spend money, then just buy new chainrings to get the ratios you want.

    * I say obvious not to be sarcastic or nasty, just with most bike changes things might seem more complicated than they are. I went through the same process, searching the internet for parts and answers but when I just took the inner ring off i suddenly and very easily had moved from a triple to a double.

Would that work? I would have thought that your indexing would still expect there to be 3 rings, the adjustment screws can't change that.

yeah you could just do that but ideally you would change to a shorter BB so that the chainset is re-centred with the cassette - not essential though - will just look a bit odd with the chainset being further from the BB.
The indexing is the same for 2 or 3 but the limiting screws will stop excess movement either way. I'm pretty sure shifters that are suitable for a triple can be used with doubles but not vice versa.
Also consider the existing ring sizes on your triple - if they are something like 48/38/28 then doubles tend to have larger big rings (50-53 teeth) so may be worth changing.
If you did do the BB and ring(s) then maybe getting up to the cost of a new chainset anyway depending on make/model.

Or just keep the triple and fit a close ratio cassette for improved real world performance.
  • What is a close ratio cassette.

one where there are no big jumps in tooth number from one sprocket to the next eg 11-23

  • Is it hard to change the cassette, ie shorten/lengthen chain to suit different ratio or as simple as taking the old cassette off and replacing it with the new one.
