Fatter tyres

I'd like my Alu road bike to be a bit more suited to off-road sections during Sustrans expeditions. Currently I'm using an old MTB which weighs a ton. The road bike has 28mm tyres which have plenty of clearance at the front and also at the sides at the back. But it is nearly touching the brake bridge (had to look up what that bit was called). If I wanted to go to 32 or 35 tyres (which would also need new wheels) could I just lock the rear wheel in place further down the drop-outs or would I need to shim the holes with something metal ?

    No, you can't do what you are trying to do. What you are trying to do is on a par with tacking a hacksaw and removing the brake bridge.
