Confusion!

So, have decided to pick up my bike again and get riding, at the mo im on a 2006 Claud Butler Cape Wrath hard tail mtb - not ideal for the sort of riding i want to start.
Have been cycling round a few reservoirs and the like, but want to do some proper road mile crunching.
Any ideas on what sort of bike? Still want some off road ability so i can still go off the beaten track when it takes my fancy, but im not really in need of the massive chunky tyres or the severely expensive hyd disc brakes that ive put on my current bike.
Any advice gladly taken, as im not really in the know, at all, when it comes to bikes.
Was hoping to spend £0, haha, but evidently thats never going to happen, realistically, i want to spend under £6-700 more hovering for less than £500.
Not opposed to building a bike, but not sure of prices etc.

If you want to do both on and off road, then perhaps a Cyclo-Cross bike might be a good choice? Someone linked to a Focus Mares in a similar thread, so have a look on the Wiggle web site for some reviews.0
