More gear woes

I've 2 sets of wheels and have just changed one set to another and back again.

Obviously, I'm aware that the rear mechs may not line up so I set them up again with each change and to a large extent I've been successful.

However, for some reason whereas before there was no problem with the distance between the sprockets and the chain on the jockey wheels, now when I change right down to the smallest chainring and largest sprocket, the latter seems to catch slightly on the chain making the chain jump.

I know that it is the B Adjust screw that alters the distance between the sprockets and chain but the head of the screw on the XTR mech has been worn down to such a degree that I cannot adjust it. It also doesn't seem to touch the rear hanger of the frame so that the angle of the rear mech can be adjusted.

What frustrates me is that previously there wasn't a problem. The rear mech is not bent, so I can't understand why this is happening.

Is taking the wheel off really enough to close the gap between sprocket and chain?

check the chain for stiff links.

and maybe get a new B screw.
