Total newbie - what should I buy?

Hi there,
I currently don't and have never owned a mountain bike, but I am about to move out of London into the country and am up for getting into biking. Trouble is, I have no idea how to go about buying a bike.
Realistically I probably won't be a a real obsessive about it.I honestly don't think that I will be steaming down the sides of any mountains through forest tracks or anything like that, but I will probably go on some fairly long rides at the weekends (and also just ride around the town on it). At a guess I would say the weekend rides would probably end up being about 70% on the road and 30% off the road. The area where I will live is fairly hilly but not mountainous. I'm also not hugely fit so won't be doing anything crazily strenuous in the short-term.
However, even though I won't be scraping every penny's worth of value from my purchase, I am quite anal about owning good quality things and knowing that I have the best possible for my needs - so I am prepared to spend a reasonable amount of money (as long as I am not paying for stuff which I will never use).
What should I buy? Also any tips on where/how to go about it?
