sounds good, cant wait to see the finished bike, i have only just finished my bright orange summer season and love it to bits, for the stem i wouldnt go more than the recommended 70mm, nuke proof are very good and also pro stems which i have on mine0

nice little setup you got there what i would get or at least try to get is:
stem - nuke proof
brakes - (depending on budget) avid elixir of some kind
rims (do you mean wheels or just the rim) - fulcrum red (again depending on budget)
tyres - schwalbe nobby nic or racing ralph etc
pedals - shimano dx300 -
Let us know what the headset is like as i am looking at one for my bike0
