Upgrade a 10 year old MTB

Hi all, I'm a bit of a newbie but have a 10 year old Giant Yukon SE, 18.5 inch bike which I brought from Australia to the UK in 2001. Specs are:
Giant ALUXX 6061 T-6 aluminum, butted
Rock Shox Jett, 2.5" travel
Aluminum linear-pull brakes, Shimano linear-pull levers
Shimano Acera EZ Fire Plus
Shimano Alivio top-swing
Shimano Alivio
SR MD250, 22/32/42 teeth
Bottom Bracket Cartridge
8-speed, 11 - 30 teeth
Chain 1/2 x 3/32"
Anyway, am now doing a bit of trail riding and using the bike for commutes (16 miles a day) and am looking at upgrading it. My basic reasons for this is I love the frame and the riding position and with a triple ring 22, 32, 42 it's pretty loaded with all the gears you'd want. However, I never use the granny ring and am hardly off the 32 / 42T on about a 6 gear spread. Right, this is what I want to do:
1. Respray frame and forks (hate the colours) to matte black £60. Add braze-ons for discs (in the future). £25
2. Retain shifters and brakes (Shimano v-brake, 8 speed Acera EZ fire plus). They work well.
3. Retain rear and front derailluer (Shimano Alvio)
4. Change chainset to Middleburn 29T and 44T with Thorn Alloy Chainguard. Get rid of granny...never use it anyway, but retain a good range of gears. £75 plus new cartridge
5. Retain 11-30 cassette.
6. Upgrade wheel set. Suggestions? Budget about £200.
Basically for £350 squid I create an original bike that rides brilliantly, but I'm not pouring loads into it. Any suggestions (am I missing something?) would be most welcome!!!!!

I'd change the forks - they are heavy brutes, with little damping and flex a lot. it will be the upgrade that makes the biggest difference to weight and performance.0
