Looking for a his & her bike - flexible budget

Hi,
Married couple looking for some his & her Mountain Bikes!
Recently got back into getting fit and we both liked cycling so thought we should get some new bikes (my old one was stolen and my wife’s is an Apollo heavy thing).
Also in the mist of this fitness commitment my wife decided to sign up to a charity Coast2Coast bike ride covering 163 miles over 3 days along Hadrian’s Wall... :roll: (Thankfully it is not till next May so we have some time to train)
Our local bike shop is a Specialized dealer or we have Halfrauds which we didn’t find anything that either of us liked.
There is an Evans Cycles near my work in Victoria (London) so we could buy something from there but I do like to support the local shops but that would narrow our options to only Specialized which might not a great idea?
POSSIBLE CONSIDERATIONS FOR MY WIFE:
The original bike my wife looked at but there seem to be some stock issues in her size:

We are both very open to suggestions so if anyone has any person experience or recommendations then do please chime in!
Not looking to waste money but willing to spend money on something decent if it is worth the money.

I don't think you need a fairly heavy bike like the Pitch -that is built for harder riding than you describe.
I think the best thing would be to visit Evans and your LBS and have a look at some cross country bikes. Sizing varies, so have a sit on a few.0 -
Agree with the previous post the pitch Pro is a bit to extreme for the riding you will be doing most of teh time.
The Top Fuel is a lovely bike for the money (big discount!) and the Specialized are a great brand.
There are 3 Evans not too far away from you in Brentford, Chiswick and Kingston.0
