convert dawes sardar to flat bars

Hullo people, I have an old style Dawes Sardar tourer (steel frame, drop bars, brilliant bike) that I'm thinking of coverting to flat bars with bar ends to get a more upright position: I never use the drops and I'm usually on the hoods. For my riding, I tend to do short journeys to the shops/gym and when touring I'm no speed merchant and there are usually offroad bits. I figure it makes sense to change.
My question is, what brake and gear levers slould I switch to? I'm on Deore triple up front and Deore 9 speed at the back, currently have STI levers. I think any shimano MTB shifters with 9 gear settings on the back should be compatible. I have cantilever brakes, so I'm thinking I can swap to MTB brake levers without a problem. Is this right?
