Here's some examples. My camera can conveniently capture RAW and JPG simultaneously.
Here's the first shot, as it was taken (sky is overexposed)
Now, with the JPG file, I can only do so much to the white-out areas. By reducing the brightness, or using the shadows/highlights, I can only achieve this. Notice how the detail is completely lost, since the white areas have been clipped.
But with the RAW file, there is so much more detail than is rendered in a JPG. So, with the RAW tools, I can actually reduce the brightness, before the detail is lost forever, like this...
