Grip vs Speed on tyres

As part of my subscription to one of the mountain bike mags i got a pair of Geax Barro Marathon tyres. Now my Kenda Nevegals that were originaly on my 2008 Giant Trance 3 have come to the end of their life and i am going to use these as the replacements. On the side it has arrows pointing in both directions - one says Speed the other has Grip. Now i am not sure which to use? Is it both Speed front & back or both Grip. Should it be Grip front, Speed back or vice versa? Any suggestions appreciated. Thanks.

    Grip on the back - speed on the front...

    Grip so the tyre holds hard under all the power you're putting down and speed on the front because, let's face it, that's just rolling and you wouldn't want it slowing you down.

    Or just paint them both red and turn them for "grip" because we all know... red ones go faster.
