Help with equipment selection - interchangeability

HI

Sorry if this is duplicated in any way to other folks issues but as i am new to this i don't know what to search for to help!!! :)

I have just bought a Condor Italia circa 2007, which is a great bike and rides very well. it will coast at 30mph in dead air no problem and hits down hills over 40mph.

the problem is that it is a bit of a mismatch in equipment and i would like to gradually even it out. it must have been changed a bit from the original. the shifting is not great but ok once in gears

I has:
campy Record - front mech, carbon steerer - i am guessing around 2005 kit
campy mirage short cage rear mech and shifters - I am guessing 2007 original parts.
campy veloce skeleton dual brakes - look relatively new and perform well
campy avanti 39/53 170mm chainset - looks dated i am guessing 2004?
Fulcrum 7 racing wheels with shwable kojak tyres
Rear fullcrum has a cheap shimano hg30 but unusually is 8 speed with 11-28 rings? usually this would be 7 rings I notice on searches?

My question is: Does the fulcrum rear hub take shimano or campy or both? it must take shimano obviously but could it take a 105/ultegra 10 speed cassette for example. or...would a campy veloce/chorus 10 speed fit?

Please let me know as this will decide which brand to upgrade the rest of the bike with.

any other advice re upgrades would be welcome. i am hanging around the 105/ultegra or veloce/chorus regions
