Simple lean recipes?

I'm trying to get this bike fitness up, but my big struggle (like most) seems to be diet.
I'm not a terrible eater by a long way, but my problem is keeping a lean diet thats quick and easy to do. It also doesn't help that I really can't get into eating fish!
So what do people on here tend to knock themselves up to keep a decent diet?
Breakfast is pretty easy, what about lunch at work where you are usually out in the car on the road?
What about tea - it's easy enough to find a bit more time here, but I tend to get impatient and want to get back out of the house.
