Which tubs?

Got my shiny new fulcrum zero tubs today, but what tyres do I put on them?

going to be used for road racing and long sportives.

Emphasis on speed, obviously, but also puncture resistance if on long sportives.

Also, which tub tape is most recommended?

    Conti sprinters are a very good, durable, not overly expensive tire that can be used for daily riding to racing.
    I also think Tufo tubulars are a good tough tire. Probably the easiest one to get on a rim correctly, IMHO. Also, Tufo tape has never let me down and it's a h*ll of a lot easier to work with than the regular tubular glue.

    21's or 23's - is the smaller tire going to make fast descending any more tricky?

    For outright performance, Vittoria Evo CX or Veloflex Carbons. Third season racing on one pair of CXs without any problems. I use Tufo Extreme tape. Tufo tubs are pretty durable and reliable with the sealant, but don't roll or handle as well. I know too many people who've had problems with Conti tubs to recommend them. Stan's Sealant seems to work pretty well on non-Tufo tyres too.
    Make mine an Italian, with Campagnolo on the side..

    Conti Competitions and Vittoria CXs seem so to be the standard RR tub hence would be a reasonable choice for you riding. Sprinters (Gatorskin version ?) probably a bit more puncture protection, not sure about any others - Veloflex maybe a little lightweight ?

    Veloflex Carbons and Evo CXs are pretty similar in weight, 250g vs 245g and near identical in size. Because a tub is more compliant, a 21mm rides more like a 23mm clincher.
