CO2 work fine, but looking at this from the road end of things pressure management might be an issue. One cannister, one fully inflated road tyre at around 100psi. But your pressures off road will vary on conditions I presume and although some come with a gauge compressed gas wants to decompress. I suspect it's only practice though.

Forget a pump for a race(assuming its XC and not Enduro) Its worth taking
    1) a cannister which includes sealant-quickest optiion for anything but a pinch flat
    2) A CO2 cannister

Make sure you have ditched valve caps and the threaded rings on the tubes

The sealant/CO2 cannister things are very hit and miss IME, I've used 5 or 6 and had an equal number fail and succeed! I go for normal CO2 and a new tube. Slightly inflate the tube in your back pocket so you can just stuff it in, should be able to be back on the bike within 90 seconds or so without too much trouble.
