Replacement Wheelset for a Trek Hybrid?

I have a 1999 Trek 7500 that is in good shape, apart from the wheels which are showing signs of falling apart.
Can anyone recommend a good low cost wheelset for replacing the old ones? I have seen some good prices on the Shimano WH-R500 wheels, but I'm not sure if these are really suitable for a commuting hybrid bike?

I have searched a little deeper and discovered that I need to know the width of my current hubs to ensure a suitable fit.
The hubs are Bontrager Comp I and II (f & r) but not sure what dimensions, I suspect they'll be MTB spec though.
I read a post that referenced using spacers to make up the 5mm difference between 130mm Road and 135mm MTB difference (http://www.bikeforums.net/showthread.php?654136-Replacing-hybrid-wheels-with-road-wheels&highlight=wheels)
Aside from the dimension difference, is there any reason not to use these types of wheel? There seems to be a big price difference between, for example, the WH-R500 wheelset and the common A319 wheelset (often listed as a hybrid set).

Confrmed last night that the current rear is 135mm and the front appears to be the standard 100mm.
So based on that and a number of results that suggest the WH-R500 is not really intended to be used as a 'utility' wheel, I am back to wondering if anyone has any recommendations for replacing the rear wheel?
I keep coming back to the Shimano/Mavic A319 option, but I am struggling to find anything to compare it to?

Should I go for broke and get a Shimano Inter 8 Hub laced up to a decent 700c rim along with a nice single speed front crank?
I'd like to go Alfine, but the Trek won't take discs.
I'm sad no one had any recommendations though, I even considered a 200GBP Kona Smoke instead of new wheels today ... but thats just silly. For now I picked up some MucOff and GT-85 and gave the Trek a spring clean.
So - back to a decent 700c wheel(set) on 135(/100)mm hubs to replace the current hula hoop(s)?

any decent wheelbuilder willput together say Mavic 319s on deore hubs for maybe £150?
go to your LBS and ask
look around on wiggle or CRC to see what they've got

My ideal budget is sub £100 for front and rear, or £50-60 per wheel
Wiggle sell M;Wheel branded wheels for about £150 on 319s - I want to keep the cost down, the bike only cost me $100 (which was about £50 at the time), so I am torn between hanging onto it or buying new - the 09 Kona Smoke at £200 seems like a good buy, and will be more modern than my Trek, but equally the frame on the Trek is sound, forks too - but I see myself needing a new BB, Crankset, chain, wheels, possibly brakes in the next 12 months - adding up the cost of components alone would exceed the £200 for the Kona, maybe even the £300 odd for the 2010 version, or another similar bike ...
Basically, aside from the 319s, which we agree come in at about £150 (front and rear) are there alternatives that perhaps come in below £100 that would suffice, I have to think that if you can sell a whole bike (complete with 700c wheels) for £200 that wheels alone should be attainable for <£100?
I have been keeping an eye on eBay too, so maybe I'll get lucky and see some half decent wheels on there ... I only need a rear at the moment, but considering replacing both at the same time if I can get something in budget.

Perhaps try emailing or phoning them to see about options on spokes, rims and hubs (ie. what would they charge for Open Sport rims on Deore hubs, etc...)?
