Cycling options crossing France N to S

A fairly random one this, but I'd welcome any top tips anyone might be able to offer.
We're going to be driving pretty much right across France from Lille to Toulouse in August, and we're taking the bikes.
We've got three days to do it in, so aren't going to go flat out down the autoroute. Instead, we want to have a pleasant cross country trip and possibly fit in a couple of rides or visit some cycling-related shrines. We've got no fixed route planned, so can meander a bit while we're at it.
Any recommendations? As a pointer, I've already got the Roubaix velodrome marked down for a visit, and I was planning on staying in Clermont Ferrand and having a pop at the Puy de Dome until I found out that the road is shut for a couple of years while they stick in a furnicular or something...
