I've got an Avid rotor thats got a bend in it... can i replace it with any brand as long as it's the same size and a 6-bolt attachment?

most are fine but some can cause issues like some sizes of hop floating rotors catch on the pad removal tags.

mostly the same with a couple of exceptions.

Just get any OEM disk (i.e. superstar.co.uk) they are designed to work on all.

The braking track should be fatter than the pads,

The width fo the disk can vary, but generally your brakes will autocompensate for the small difference.
