Sun Ringle EQ rims and 2.5" tyres help needed.

Hi all, this is my first post here. I've just got a Ragley Mmmbop and want to put some wider rims on to accomodate some 2.5" rubber.
I've been using my XC717 rims with 2.4" Vredestein Killer Bees but need something wider. Not so much stronger but wider to allow the tyre to spread properly.
What I need to know is width rim I need to take 2.5" tyres comfortably. Been looking at the EQ 29 or 31, maybe the 27 and also the Syncros DS23 or 28. They don't give too much info on inner bead width.
