Bike recommendations for Spanish Road please?

Hello one and all.
I am looking for an all day sportive type of bike. The two main things it needs to do are fly up large mountains and be steady coming down and to cope with rough sometimes cracked roads or even the occasional cobbles. The bike will mainly be used in Spain roads but occasionally UK too.
I don't need flash names or colours just a nice light but strong mountain flyer that is comfy enough for all day rides, hopefully with a good sprint finish.
My budget is £1000 give or take a little either way.
Can anyone recommend a hidden treasure?

You'll need to make sure you get one that can be converted from left to right hand drive then0

I think you'll find that the two attributes you seek are rider related rather than coming from the bikeM.Rushton0
