do all rotors fit all calipers?

I'm picking up new rotors for a set of avid ultimates, but some rotors seem to have a different depth contact area - this was noticeable on my old Hayes where i could see rub marks on the spider. Not much, but the pad was clearly over hanging the majority of the contact surface probably reducing power.
Do I need to be wary which rotors i buy so that the pad fits within the depth of the contact area? These are what I'm looking at.
I have no idea what the anatomy of a rotor is...

there are a few known clearance issues.... for example, I think its avids that don't work with hope floaters.
Also, recently, it has been discussed that some disks are thicker than others. This can alter the lever feel - the thicker the disk, the less the lever will move and the thinner the disk, the more the lever will need to move.
In theory this could lead to slack lever syndrome or the brake feel becoming a little bit wooden.
But tbh, i wouldn't worry too much about it if you have the correct adapter (as nicklouse mentions).0 -
