Age old question - WHICH BIKE??

Hi , first post on forum so go easy on me ;-)

Apart from a 15 year old MTB, a complete beginner to the roads. New found craze for challenges (some might call it mid-life .. . . no, i wont) has seen completed marathons pass by and Ive now set sights on a multi-sport event in Scotland.

Race info states that for the expert event, where the course will cover country roads and then some off road/trails: "recommended that a road bike is used for Day 1, then a cyclo-cross or mountain bike for Day 2. Although the hardy with only one bike in their possession might choose to fit slicks to a mountain bike for Day 1, then treaded tyres for Day 2"
Needless to say im not in the expert class.
My question for you wise folks is really with this race in mind, what should I go for. I will only be using one bike for this race.

There is the added issue that after I have completed this, most of my further forrays into cycling will be on roads mainly, and depending on if I enjoy it, would also consider trying hand at duo/triathlons so a bike that would be suitable (obviously not ideal) for this would be great.
I know that covering all this in one bike is somewhat tricky but budget problems mean I really cant be thinking of two different bikes over this time scale. My budget for this bike is maximum £1000, through CTW scheme and current reading and online searching has lead me to cyclo-cross (kona jake the snake, trek xo1) but your advice is greatly appreciated!
