I'm looking for tyres that can deal with mud without getting clogged and have good grip on wet roots - what do you recommend?

Hmm tricky...I've had reasonable success with an Intense System 4 EX DC on the back this winter. It's not a proper mud tyre but its old-school design means it clears pretty quickly and the bizarre soft-in-the-middle hard-on-the-edges compound means it hooks up and winches over wet roots and rocks.

Over the winter I've been using Wet scream up front with a highroller out back the tubeless versions. More grip than I really need but not much falling off this winter. This won't work as well for trail centers only in the muddy forests.

As mentioned STST have more grip than bavarian arm westler.

I have been using a single ply 60a maxxis minion on the front of my bike through the winter.

They are one of the best all rounders money can buy. Absolutely fantastic grip in mud or in the dry and they handle roots just as well

There's mud and there's mud, my Minions are not so good in our mud, nor are the Nobby Nics and forget about Highrollers.

For my mud set-up I use a 2.1 Trailracker up front and a 2.0 Mud X out back, rolls surprisingly well and handles the dry bits and gravelly stuff nearly as well as the Minions.

I don't know what kind of mud you are on about ten. They are great for me on really wet clay and tat is some of the worst mud around

    Everybody rides differently though

Ah but then there's clay and there's clay, ours is London Bolder, not much difference to riding on ice at times. :)

Ahh but then I ride the clay on the Eildons. Very sticky and almost never dry. If it is then it is rock solid and dries in lots of big bumps.
