LBS building my Soloist this week

My (new/unused) Anodised Black Soloist is being built by my LBS this week. Components include
Ultergra SL
Hand built wheels by Derek the Wheelsmith
IRD cadence road front 24h and rear 28h rims, black
PMP pro road hubs, Shimano 9/10sp black
Sapim CX-Rays black with Polyax nipples
Ergosum team carbon handlebar
3T ARX Team alloy oversized road stem black
Trigel Elite Ti saddle
Michelin Pro 3 Race road tyre
The stem is a Wolf CL (yes CL, it came with the frame). Can you recommend a better stem?
PS: Not sure if this makes any differnce but frame is 51cm and I'm about 140lbs and will use the bike for training rides and the odd Triathlon
