Advice on Lightweight commuter/hybrid bike for family member

Hey folks,
First venture on here from the MTB forum.
Im a mountain biker through and through but my mum recently asked me to try and find her a bike for pottering around the town/village on.
She dosent want anything complicated, So I would imagine single speed or a 3 speed maybe, suspension not really needed, must be comfortable to ride and lightweight for the rolling hills.
Any ideas for a budget of around £300-£500?

It has a step through frame, large tyres and a rear carrier
Too many gears but that's the way it goes these days0
