I had some fantastic wild Venison last night. It was shot by a friend a few weeks ago on a Scottish farm where he has shooting rights. He bagged three of the cute but tasty blighters, gutted them on the hill with the entrails going straight to his dogs, Hoth like I guess.
A local butcher prepares the meats into joints and sausages, it is almost fat free and tastes sublime.
