New cassette/chain for tourer

The time's come to replace the chain and cassette on my Claud Butler tourer. At the moment it's a triple, 9-speed Shimano mix-and-match - Deore rear mech and hubs, Tiagra front mech, and 105 STI shifters, so I'm not sure which cassette it's got but it's 11-32.

I've never shopped for chains and cassettes before - last time I replaced them, on my Giant, the whole lot was stuffed after the rear mech fell into the spokes so I gave it to the LBS and let them fix it all.

What's the difference between, say, a HG50, HG80, and Deore HG50 cassette, all 9-speed, other than the price? Will any 9-speed chain run on any 9-speed cassette? Are Shimano, SRAM and KMC compatible with each other?

    The only 11-32t cassette I can see on CRC at least is a Deore HG50, under MTB cassettes, makes sense with the Deore mech and hub.
