Don't know of a Gillingham in Surrey, but there is one in north Kent near Chatham and one west of London (some fair way west, I might add) and which is pronounced with a hard first g (as in good) whereas the kent one is as in ginger!
Anyway, if you're talking about Kent, there is Bedegury Forest ( cycle club url http://www.boarsonbikes.co.uk/) that has some nice family trails (around the fire tracks) with single track in t'woods.
There is also Swinley near Bracknell (some way away) and Friston Forest between Eastbourne and Seaford about an hour away (not been to either so can't comment).
It's a start, which may be of help.
