So Apart from the price differential - what is the qualitative difference between the cheapest and most expensive hydraulic brake in a manufacturers range.

eg - Shimano 575 deore v xtr ???

And often weight.

Avid XXs weigh far less than Juicy 3s, but also work better for the same rotor size. Code's have (had?) far more power/control, but weigh a bit more.
