What size disc brake rotors?

I am planning on upgrading to disc brakes from v-brakes and I am looking for some advice as to what size disc rotors to go for.
I have a Genesis Dual Track with some (presumably) budget RST forks and after reading some good reviews, was going to fit some Magura Julie HP disc brakes. These are available in 160, 180 and 200mm rotor sizes. I had assumed that bigger discs meant more stopping power and, seeing as they were all the same price, I was going to go for the 200mm ones. I have since heard some horror stories about front wheels detaching if discs that are too big are fitted and only being able to use bolt-through axles rather than QR.
Any advice would be welcome.

You don't need any bigger than 160. So don't fit bigger than 160. Bad things may happen if you do.0
