New wheelset for Focus Cayo

Hi all,
I'm looking to upgrade my '08 Focus Cayo. I've taken off my Mavic Aksiums and now using those on my commuting bike, Giant SCR 1.0. I'm now looking for a new wheelset. My budget is around the £350 mark. I had taken a shine to a set of Shimano Ultegra SL's, but according to Ribble they're only compatible with Dura-Ace cassettes.

what do you want them for? Just best bike duties? Or good weather training and club runs? Racing only?0

Want them for good weather only, club runs, also fancy myself as a bit of a hill-climber.
Shimano RS80 seem quite appealing, but Ribble don't have them in stock at the moment, and everywhere else is quite bit more expensive.0
