I'm thinking of running gears at the back and a single ring at the front on a hardtail. Will the chain keep coming off the front ring without a mech and will I have to buy a chain device, or can I just leave it? Cheers

    yes. it can come off.

A guide is a good idea.

Agree with Nick, it CAN come off, if your usage is light then it may well not though, good (higher than normal) chain tension from the rear mech would help - I had an original 5speed Derailuer rear only with single front - remember it well from my youth much better than my old Sturmey Archer hub gears- oops! -and jumps would frequantly jump the chain off - often came back from bike rides with greasy fingers and greasy patches on the front of the jeans....
