Hybrid covers a huge range of bikes from basically flat bar road bikes to the one you mention above.

Some hybrids use 700c sized wheels and a rigid fork, others do have suspension up front and some do use MTB 26" wheels, depending on the spec.

I also think it's also down to a more comfortable ride, so comfort orientated saddle, more relaxed seating postion and so forth.
