Just how much difference do BRAKES makes?

Ok, apart from the obvious!
Been upgrading the groupo on my Bianchi from 105 to Ultegra piecemeal. First the cassette, then the mechs, now thinking about brakes after someone linked to Ultegra SLs on sale for £60 the other day. It's not like the weight saving is going to be noticeable so is the stopping power noticeably better?
It got me thinking, for all the use my brakes actually get, is upgrading them actually worthwhile?
Thoughts?

Presuming it is the same generation 105 it will almost certainly be virtually identical. Weight will be the only factor. You would probably notice more of a difference from changing the pads (using wet weather pads for example in the winter.) I am presuming you can throw yourself over the bars with your current calipers?0

I went from Sora to Ultegra and barely noticed the difference.
What *does* make a difference is a) aluminium brake shoes with replaceable pads and good quality pads (Koolstop Salmon or Swissstop green), and b) good quality, well looked after cables.0 -
