Advice for wheelset for Trek 7500 FX Hybrid, please help!

Hello,
I have a Trek 7500 FX Hybrid from 2005. Unfortunately, I got lazy and didn't lock up my rear wheel properly and now it is stolen (yes, that was utterly stupid on my part). My local bike shops haven't been too helpful here, they either want to sell me the cheapest or most expensive option and I'm hoping to get some solid advice from folks here that have nothing to gain from their advice. I'm fairly ignorant with understanding bikes, so please excuse me if the questions are stupid. Thanks in advance.

It originally came with Bontrager Select and Bontrager Race Lite Hardcase. After talking to Trek, they said I would need a rear wheel that has 135mm spacing, takes rim brakes, fits for a 9-speed bike, and is 700cc.
I primarily ride on the streets of New York City. I enjoyed my riding experience with the stock setup from Trek, I don't want to end up downgrading and here are my questions/options have researched so far:
1. Originally, I wanted to find the exact same wheel for the rear so I do not have a mismatched pair but after calling around and having people laugh at me, it seems it is impossible to find something from 2005. So the closest is for me to replace the rear wheel with a Bontrager Race at a cost of $230 US for the wheel, $45 US for the Bontrager Race Lite Hardcase tires, and $40 for a cassette and I am good to go. Should I be concerned about a mismatched pair besides the slight difference in aesthetics? Will this impact the ride experience in anyway to have different wheels and a different age for the tires? I know for automobiles, it is always wiser to replace the tires at the same time.
I could also get a Bontrager Race front for an additional $180 USD for the wheel for a matched pair.
2. Another option presented to me was the Mavic SpeedCity wheelset for $430 USD for both the front and rear. I would still need to purchase tires and the cassette. The shop that sells this tells me that the Mavic SpeedCity will be much better than the Bontrager Race. Any truth to this and any tire recommendations if I go this route?
3. My last option I found was to get a custom built wheelset. I found two that seems like they may work for me, one is build with Mavic A119 rims, Shimano XT M760, and DT Swiss spokes for $180 for the front and rear, or get it with a Shimano LX M580 instead for $143 for the front and rear. I would still need to get tires and the cassette.
I am open to other options too. Any suggestions or advice, especially on what I can expect from each option is greatly, greatly appreciated! Thank you very much.
