Harry Quinn - full setup or single speed?

Okay - I've been working on this for ages and can't decide what to do.
I'm close to finishing a restoration on a Harry Quinn frame - lovely thing with Nervex lugs.
I can't make up my mind whether I should make it a single speeder or take all the bits of my Claud Butler spare bike and build a road bike out of it?
I couldn't afford to buy parts to build it up to anything other than a single speeder - so using the Butler would give it an 8 speed Sora setup
Thoughts?

I think your answer is dictated by the wheels. The Quinn will be 126mm or maybe even 120mm rear end whereas your modern hubs will be 130mm. If the Quinn is 126 you will be able to sprin the rear ends enough to fit the wheels; if it is 120mm then I doubt you will.0
