Possible new bike advice

So I'm a mountain biker that's looking to get some extra milage on a bike and some less milage on my car. I've been lurking Ebay, Gumtree, here and a few other bike forums looking for a bargain second hand bike, but I cant seem to find one I want in my size.
I've decided to hold off a few weeks until I've paid off some debts (to uni) so I can spend my cash guilt free, this will allow me to spend £600 or so on a new bike.
I'll likely either buy from Edinburgh Bikes or either one of my two LBS's: Sandy Wallace or the Leslie Bike Shop
If I go local then I have a choice of a Giant Defy 3 or an Orbea Enol or Fleche
If I go to Edinburgh then I can get an Allez (really like the look of the 2010 ones in Red)
Its a few weeks til I can go out and buy one, and I'll probably ask to at least sit on one before I make up my mind, but I'd appreciate any thoughts or opinions on the 3 or 4 bikes I have availible to me.

Ive never owner one - but I do like specialized bikes. Seem good value, although there are plenty about - they still seem to look quality and more expensive than they are.0
