Suggestions for a Provencal Grand Day Out

Hi Folks.
I have a meeting in Provence in September - Greoux les bains, just outside Manosque (apologies for long link).

I am getting to my meeting from Aix TGV on my (6 speed) Brompton, but will have a full day-ish (from 11am) before getting back to a hotel in Aix or Avignon to get the TGV home early the next morning.
So... 8hrs on a foling bike in Provence with a light luggage. What would you do?
