Defintely a blend of mayo and horseradish or mustard with liberal grindings of fresh, black pepper. Failing that Encona chilli sauce or possibly garlic mayo (mixed with horseradish or mustard). Oh and the mustard has to be Colmans. Can't stand that vinegary French crap. In fact I hate vinegar.Do not write below this line. Office use only.0

In Plymouth about 8 years ago I bought chips and they put grated cheese over the top and melted it.
It was very nice. Had it again a few years later in Camden - after a drunken Fall gig.
I've had gravy on me chips once - when I was in Macclesfield. Very nice! Very nice chips in Macclesfield, I have to say. I believe that there are chippies in London that do gravy - must remember to give it another go.0 -

Brown sauce....even the cheap brands seem ok but HP or Daddies are the best. Vaery rarely have ketchup these days. BBQ sauce is also becomming popular....0

Yep we sure do with loads of salt and extra vinegar.
THe type of peas depends where you go to round here they are always homemade ( soaked from dry) marrowfats or mushyBianchi. There are no alternatives only compromises!

Mmmm, chips & cheese! Used to get that regularly when at uni in Edinburgh. Failing that (or sometimes in addition to!) I'd add mayo. Nyum nyum.0 -
My family have been running Fish & Chip shops since 1974. My Dad bless is him frying Fish & Chips for the good people of Leicester as we speak. As is my uncle in our other shop.
I therefore consider myself an expert in the subject of chips.
The best chips come from a traditional chip shop. Not a fast food chain such as the golden arches, or elsewhere. They should have plenty salt & vinegar, and thats it. At a push I would say a bit of ketchup (Daddies only) or on a tray with curry sauce or mushy peas. Anything else is wrong.
If the chips are frozen and cooked in the oven, such as you would eat at home or with a pub meal then Mayo is ok. But with real chips from a chip shop? No way!"I spend my petrol money on Bikes, Beer, Pizza, and Donuts "

I found a sauce the other day called Cholula. Hot and tangy it is and superb on chips.
